APPLE & BERRY MUFFINS

INGREDIENTS

​

1 cup gluten free self  raising flour

1 cup buckwheat flour or almond flour

1/2 cup maple syrup

1/2 cup pureed apples

3/4 cup of blueberries

1/3 cup dairy free spread (nuttelex)

2 whites of  eggs

1/2 cup milk alternative (soy, almond, macadamia, coconut)

METHOD​

  1. Place all ingredients except berries in a large mixing bowl and mix well until all wet and dry ingredients are well combined

  2. Once all ingredients are well mixed add berries and gently mix through the batter 

  3. Place heaped spoonfuls into greased muffin trays and bake in a pre heated oven, set on 180 degrees for 20-25 minutes or until they are cooked through

​

SUGGESTIONS AND TIPS;

You can use a mix of berries or make it more specific, using only raspberries, blueberries or strawberries, even adding some apple or banana, cinnamon or nutmeg in place of or with the berries.

These muffins are also able to be made using different flours if you prefer not to use self raising flour at all.
