BANANA BREAD

INGREDIENTS

 

​3 ripe medium sized bananas

1 cup nutlex or dairy-free spread of your choice

1/4 cup of your preferred sweetener (maple or golden syrup work well)

½  cup pitted dates ( more can be added if you prefer a sweeter taste)

1 ½ cups gluten free self raising flour

1 cup walnuts, pecans, nuts or seeds of your choice

1/2 cup egg white or 2 eggs

​METHOD

  1. Mash peeled bananas in a large bowl

  2. Add eggs and mix well, then add the softened nutlex or dairy-free spread to the mix and combine well

  3. In a separate bowl add the flour, sweetener, crushed nuts and finely chopped dates.

  4. Add the rest of the dry ingredients to the banana mix and mix well

  5. Place mixture into a well-greased loaf tin and. bake in a moderate oven at 185 degrees for 30-35 minutes, until cake is golden on top and the skewer comes out clean

Alternatively you could place the ingredients in a food processor to blend the wet ingredients, the adding the rest of the dry ingredients, adding the nuts last.

SUGGESTIONS :

Adding sultanas, currents or dried figs also works well with this recipe, along with seeds or some dessicated coconut for another variation.
