BUTTERNUT COOKIES


INGREDIENTS

1.5 cups self raising gluten free flour
1 cup nuts of your choice
4 tablespoons nuttelex or dairy-free spread of your choice
3 tablespoons honey or maple syrup

METHOD

Place all ingredients in a food processor or blender and blend until all ingredients are well combined

Place rolled balls of the mixture on a greased oven tray, and slightly flatten them before placing them in the oven

Bake in a moderate oven, 180 degrees for 20 minutes or until golden
-
Store in an airtight container in a cool place for up to 3 days

SUGGESTI0NS AND TIPS;
You can also add carob powder, carob chips, dried fruit or coconut to the mix for a different flavour.
If you want a nut free version, substitute the nuts for more flour and add a little more sweetener and dairy free spread as the nuts help to keep the cookies moist.
