HERBED CALAMARI STIR-FRY
INGREDIENTS
2kg calamari, cleaned and sliced into bite sized pieces
250gm baby spinach roughly chopped
1 long red chilli finely diced
1 cup roughly chopped fresh coriander
1 cup freshly roughly chopped flat leaf parsley
1/2 cup fresh roughly chopped basil
1 teaspoon lemon grass powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon cracked black pepper
2 tablespoons water
1 tablespoon sesame oil
1/4 cup olive oil
METHOD
1. Place fresh and dried herbs, cracked pepper, baby spinach, olive oil and chilli in a large fry pan and saute for 5-10 minutes
2. Add sesame oil and calamari and transfer to a baking dish and place in the oven, covered, and bake for 15-20 minutes on a low heat, 130-150 degrees, mixing half way through.
Do not over cook the calamari as you want it to remain tender. You can uncover it and bake for a further few minutes if you prefer it to brown up a bit more.
You can also add some more water if you prefer more of a sauce.
SUGGESTIONS AND TIPS;
This dish can also be made using fresh pesto or chilli paste, adding some lemon or lime juice, as well as placing some fresh dill or tarragon in place of basil or coriander.
You could also use prawns in place of or with the calamari, as well as fish or a marinara mix.
