
CHICKEN MINT BALLS


INGREDIENTS

1kg chicken mince
1/2 cup fresh chopped mint
1/4 cup fresh basil
4 kaffir lime leaves finely chopped
1 tablespoon lime juice
2 tablespoons sesame oil
1 teaspoon cracked black pepper
1 teaspoon lemongrass powder
Oil of your choice for deep frying

METHOD

Place mint, basil, kaffir lime leaves, sesame oil, chilli, lime juice and mint in a food processor or blender and blend, then add the chicken mince and blend until all ingredients are well combined

If the blender or food processor struggles with blending all ingredients, mix well by hand or add a small amount of olive oil to the mixture

Once all ingredients are well combined, take a tablespoon full and roll into balls, place into a deep fryer or pan with preheated oil and cook until golden

SUGGESTIONS AND TIPS;
This is a great snack or meal, it can be added to salads, vegetables and even soups or stews.
You can add different herbs and spices and flatten them out more when you cook them to make patties for burgers, or even pop them on a kebab stick or in a wrap with salad and dips.
