
CHICKEN SHISH KEBABS


INGREDIENTS

1kg diced chicken breast meat
1 punnet cherry tomatoes
2 red onions cut into cubes
1 tin baby corn spears
2 tablespoons ground cumin
2 tablespoons ground coriander
1 teaspoon ground tumeric
1 teaspoon garam masala
1 teaspoon ground black pepper
1/4 cup olive oil
1 packet kebab sticks

METHOD

Cut cherry tomatoes in halves, and cut red onions into cubes

Mix ground cumin, coriander, garam masala, black pepper and turmeric in a bowl with olive oil
-
Coat the diced chicken breast in the above marinade mix and let stand for 10-15 minutes

Place one piece of each item onto the skewer stick until the sticks are full, leaving enough space to hold each end

Place each stick on a BBQ or lined oven tray and drizzle with olive oil, bake until chicken is browned and cooked through

SUGGESTIONS AND TIPS;
Another marinade that works well with chicken is honey soy, you can use gluten free soy sauce available in most supermarkets and use honey or maple syrup with a dash of sesame oil.
Using different vegetables or meats and seafood are also an option to make a variety of kebab sticks.
