CUCUMBER & BASIL DIP


INGREDIENTS
3/4 cup Lebanese cucumber, peeled and roughly chopped
2 cups fresh basil roughly chopped
1 cup parsley roughly chopped
1 cup baby spinach
1/4 cup olive oil

METHOD
-
Place all ingredients, except for the olive oil, into a food processor or blender and blend, gradually adding the olive oil as needed.

Once all well combined and the cucumbers are blended well store in an airtight container in the refrigerator for up to 2-3 days

SUGGESTIONS AND TIPS;
You can also add fresh dill, coriander, sunflower seeds or pumpkin seeds, the combinations are endless.
