
FENNEL, BASIL, PINE NUT & ROCKET SALAD


INGREDIENTS

4 cups fresh rocket
1 cup fresh roughly chopped basil
1 fennel bulb finely chopped into small pieces
2 tablespoons roasted pine nuts
1/2 cup baby cherry tomatoes, can be left whole or cut into halves

DRESSING
1/4 cup olive oil
2 tablespoons sesame oil
1 teaspoon lemon juice
1/4 teaspoon cracked black pepper
​
METHOD
-
Place all salad ingredients, except the pine nuts in a large bowl and toss together

In a seperate bowl add the olive oil, sesame oil, lemon juice, and cracked black pepper and mix well
-
Add the pine nuts in a fry pan with 1 tablespoon of olive oil and lightly fry until golden brown

Pour the salad dressing over the salad and mix through lightly

Sprinkle the Pine nuts over the top of the salad and serve

SUGGESTIONS AND TIPS;
This salad is great with celery, peas, apple, pear or avocado added to make a slightly different variation.
