LAMB & SPINACH MEATBALLS

INGREDIENTS

 

500gms lamb mince 

500gms baby spinach or frozen chopped spinach 

1/2 cup finely chopped fresh parsley 

1/2 cup finely chopped fresh coriander

1/2 cup fresh chives finely chopped

4 spring onions roughly chopped

1 tablespoon ground cumin 

1 tablespoon ground coriander 

1 teaspoon ground black pepper

1/4 cup olive oil

METHOD

  1. Place all greens and olive oil in a food processor or blender and blend well 

  2. Then add lamb mince and ground herbs to the blended greens mix and continue to blend until all ingredients are well combined 

  3. Roll into small balls and fry in a heated pan with some olive oil until golden brown. These can also be baked in the oven if preferred on a moderate heat, or cooked in the air fryer, or deep fried until golden

SUGGESTIONS AND TIPS;  

You can also add chilli and garlic to this recipe along with extra fresh or dried herbs of your choice. 

Another great idea is to add some broccoli, fennel, broccolini or other greens and herbs of your choice to create a variation depending on what you feel is required at the time to best support your body.
