OAT & CRANBERRY COOKIES

INGREDIENTS

185gm self raising gluten free flour

100gm gluten free oats

1/4 cup sesame seeds

4 tablespoons softened nutlex or dairy free spread of your choice

1/4 cup maple syrup or honey

1/4 cup cranberries

METHOD

  1. ​Place all dry ingredients in a large bowl and mix well until combined​, once mixed add wet ingredients and mix well (you may want to melt or soften the dairy free spread before adding it)

  2. Roll into spoonfull sized balls and lightly flatten placing on a lined baking tray and bake in a moderate oven (180 degrees) for 15 minutes or until golden

SUGGESTIONS AND TIPS;

If the mixture is a bit dry, as it can depend on the type of dairy free spread you use, just add a little more to the mix to moisten it up.

You can also omit the cranberries and replace with sultanas, dates, raisins or dried apricots, and in place of the gluten free flour you could use a gluten free flour alternative if you prefer.

Dried fruits are also not needed, as these cookies taste great simply as they are.
