PARSLEY, MINT, FENNEL & CUCUMBER SALAD

INGREDIENTS

​

2 cups curly parsley finely chopped

1/2 cup fresh mint finely chopped

2 small lebanese cucumbers

1 fennel finely chopped (including the stalks)

2 stalks spring onions finely chopped

4 tablespoons olive oil

2 teaspoons sesame oil

METHOD

  1.  Finely chop all ingredients, they can be placed in a food processor or blender for a few seconds if you like it to be very fine, but be careful not to over blend it as it will become watery 

  2.  Once parsley, spring onions, mint, cucumber and fennel are chopped or blended finely mix through the olive and sesame oil and serve

SUGGESTIONS AND TIPS;

You can also make this salad with finely chopped apple or pear, also adding sunflower or pumpkin seeds as well as pine nuts.
