
Ingredients
1kg skinned and boned barramundi fillets (left as fillets or cut to bite size pieces)
2 tablespoons ground cumin
2 tablespoons ground coriander
1 tablespoon ground tumeric
1 teaspoon cracked black pepper
5 tablespoons olive oil

Method
​
1. In a large bowl mix all dried herbs and spices together, then add olive oil and mix well.
2. Add fish fillets or pieces to the dried herb and olive oil mix and make sure each piece is well coated
3. Place herb coated fish in an over safe dish and bake covered with aluminium foil on 170 degrees for 15 minutes or until cooked through. Alternatively this can be cooked on the BBQ grill for 10 minutes or until cooked through.

SUGGESTIONS AND TIPS;

You can also add some fresh crushed garlic, chilli and a variety of herbs to change the flavour of the dish.
I love this cooked in the oven as it retains most of its moisture and creates a delicious sauce that can then be poured over steamed or baked vegetables or salad.
