


INGREDIENTS

1 whole snapper (can be skinned and boned if preferred)
4 cloves garlic crushed
2 tablespoons fresh or dried thyme
1 tablespoon cracked black pepper
1 lemon sliced with seeds removed
4 stalks spring onions finely chopped
1/4 cup olive oil

METHOD

Place fish on a tray lined with greaseproof paper and a sheet of aluminium foil to sit fish on, and wrap once prepared and ready for the oven

Place the fish on top of the foil on the tray, inside the fish (or over the top if you have filleted the fish) place slices of lemon, crushed garlic, spring onions and a sprinkle of cracked black pepper and thyme

Drizzle fish with olive oil and cover with the foil

Bake in the oven, on 150 degrees for 20 minutes or until fish is firm. You do not want to overcook it as it will dry out

SUGGESTIONS AND TIPS;
Any fish can be used for this, and rosemary in place of thyme also goes well with fish.
Dill is great with salmon or trout, as is tarragon.
If you do not have any fresh fish, you can always cook it straight from frozen, allowing a few extra minutes in the oven for it to cook through completely.
