
Ingredients

1kg soft white fish skinned and boned
1 bunch shallots finely chopped.
1 cup coriander finely chopped
1 cup parsley finely chopped.
250gm baby spinach
4 kaffir lime leaves
1 banana chilli
1 teaspoon tumeric
1 teaspoon cracked black pepper.
1/4- 1/2 cup olive oil (extra olive oil maybe needed as the mixture cooks)
Method

Place Olive Oil, fresh herbs, baby spinach and shallots in a fry pan and lightly sauté on a medium heat

Once lightly sautéd add the fish and continue to sauté stirring frequently so the fish can begin to break up

Once the fish has broken up, it starts to resemble a scrambled, mashed type consistency and the fish is cooked through it is ready to serve

Serve warm or cold, wrapt in lettuce leaves or by itself as a side or main dish

SUGGESTIONS AND TIPS;
​
You can also add some fresh crushed garlic, chilli and a variety of herbs to change the flavour of the dish.
Adding extra olive oil during cooking can also help to stop this from drying out, you can also cook it until it goes crispy, we often use it as a salad or vegetable topper for extra protein.
