INGREDIENTS

​

3 onions finely chopped 

1 teaspoon tumeric powder

1 teaspoon ground cumin

1 teaspoon ground coriander

2/3 cup besan (chickpea) flour

1/2 cup cold water

METHOD

​

1. Place dried herbs and flour in a large mixing bowl and mix well

2. Gradually add the cold water, you may not need all of it, the batter needs to be thick enough to place spoonfuls in a deep fryer, not too runny or it will not bind to the chopped onion

3. Once all ingredients are well combined place heaped spoonfuls into heated oil in a deep fryer and fry until golden

SUGGESTIONS AND TIPS;

​

The base mix of this recipe is great with other finely chopped mixed vegetables such as grated zucchini, pumpkin, peas or beans, adding fresh herbs or other dried spices for a different flavour.
